Pub on the Green Chicken Francais
4 (6 ounce) boneless skinless chicken breasts
Flour, for dredging
2 ounce clarified butter *.
1 cup gewurztraminer.
2 little shallots, minced.
3 garlic cloves, minced.
Salt and white pepper, to taste.
3 tablespoons French-style entire grain mustard.
1/2 cup whipping cream.
* To make clarified butter, gradually melt a stick of saltless butter up until the milk solids melt to the bottom of the pan. Skim foam off the leading and utilize just the clear golden liquid.
Pound chicken breasts in between 2 sheets of plastic wrap to make consistent density for even cooking. Location chicken in pan and sauté up until prepared midway through, about 3 minutes.
Turn over chicken and include minced shallots and garlic, preparing one minute up until you can smell the scent of garlic. Let sauce cook for 2 minutes to lower, then include heavy cream. Let sauce cook for another 2 minutes to thicken sauce a little.
Yields 4 portions.
Serve with Chardonnay.
