There are people who believe they can simply serve whatever wine they have in the house for dinner and don’t see any need for a special wine. Generally, white wine should be served with white meats and red wine with red meats. Chicken, on the other hand, goes best with a fruity red wine. The same is true when serving fish: you might prefer red wine to white wine when you serve it. Sweet seafood like lobster is quite tasty when paired with sweet white wine rather than red wine. Sometimes you might want to break the rules, as if you were serving a White Bordeaux with bluefish. Don’t think you’re doing anything wrong if you have to make choices that are out of the ordinary for various reasons.
In general, there are no hard-and-fast rules regarding the pairing of white wine with white meat or red wine with red meat. The pairing can be changed according to the situation. Likewise, when serving wine, avoid serving any with salad. That’s because vinegar and wine don’t mix well. When choosing the right wine to serve with your appetizers, consider the ingredients. When serving cheese platters, the best wines to drink with cheddar are reds such as Merlot, Cabernet Sauvignon, and Pinot Noir, while whites such as Merlot, Cabernet, and Sauvignon are preferred with Swiss. Camembert and Brie, two French cheeses, pair superbly with Chardonnay, while Parmigiano, Romano, and Reggiano, two Italian cheeses, pair well with dry red wines from Italy. To balance the oil in fried appetizers, you can serve white or red fruit wines.
