Velvety Braised Chicken
My sibling sent me this dish. It sounds terrific and will attempt it out for mom’s day.
1/2 pound pearl onions
1 cup very finely sliced onion
1/2 cup very finely sliced carrot
1/2 cup very finely sliced celery
1 tablespoon plus 2 teaspoons butter
6 boneless skinless chicken breast halves
1 cup Chardonnay or other gewurztraminer
1 1/3 cups chicken broth
1 tablespoon parsley
1 teaspoon salt or to taste
1 teaspoon dried thyme
1/8 teaspoon newly ground pepper
1 bay leaf
3 tablespoons flour
1/2 cup half-and-half or vaporized milk
1/2 pound fresh mushrooms, quartered
in a big pot, bring 6 cups of water to a boil. Include pearl onions and boil 3 minutes. Rinse and drain pipes in cold water, peel and reserve.
In very same pan, sauté sliced onion, carrot and celery in 1 tablespoon butter up until tender. Get rid of from pot and reserved.
