Chicken with White Wine and Mushrooms
4 chicken breast halves with skin and bone
All-purpose flour
1/4 cup olive oil
2/3 cup sliced onion
1/3 cup sliced carrot
1/3 cup sliced celery
2 tablespoons sliced Italian parsley
2 huge garlic cloves, sliced
1 pound mushrooms, sliced
1 (14 1/2 to 15 ounce) can diced tomatoes in juice
1 cup dry gewurztraminer
Spray chicken with salt and pepper; dust with flour.
Consist of chicken, skin side down, and sauté up till brown, about 5 minutes. Turn chicken over and sauté 3 minutes.
Consist of onion, carrot, parsley, celery and garlic to fry pan; sauté 2 minutes. Sauté and consist of mushrooms up till starting to brown, about 10 minutes.
Consist of tomatoes with juices and gewurztraminer. Boil sauce up till rather thickened, about 10 minutes.
Return chicken to sauce. Cover frying pan, reduce heat to medium and simmer up till chicken is prepared through and tender, about 15 minutes.
Transfer chicken and sauce to plates and serve.
Makes 4 parts.
