Can I use red wine in a lemon wine sauce?

Red wine will give it a different taste than the traditional white wine used.

It really is best to use white wine. For a lemon wine sauce, dry wine should be the best choice.

red wine will change the flavor AND the color … unless you’ve tasted it, and it needs “something,” don’t add worchestershire and/or mustard – yet … Try a little Brandy, maybe watered down, instead of the white wine

Red will alter the flavor…and no, I wouldn’t add mustard OR worcestershire to a lemon wine sauce.
If you don’t have white wine, sub chicken broth.

ok…scampi doesnt have to have wine…lemon and garlic is fine…worcestershire sauce…definately not….but Dijon mustard is the new “It” ingredient…depends on your taste..but red wine will ruin it as a scampi…and just a little info for you…a scampi is actually a type of shrimp..so when you see chicken scampi or other types of scampi…just kind of makes ya giggle…enjoy your good eats!!!!
