Bean Salad Recipes

There are many reasons to eat beans. They are a source of protein and they are suitable as part of a low fat diet. Bean Salad recipes are a tasty way of including beans in a healthy lifestyle and they can be enjoyed by vegetarians with many recipes also being appropriate for vegans. There are a wide variety of beans, used across the world, such as broad beans, runner beans, soybeans, mung beans and lima beans.

The beans can be used fresh or some can be bought in cans. Getting to know your favorite beans is all part of the fun and some beans in Bean Salad recipes may be unfamiliar. If there is a bean that does not appeal to you, then it is simple to substitute another although most people with a taste for beans tend to enjoy them all.

Green beans with onions, basil and potatoes are very tasty when added to a balsamic vinaigrette, created from lemon juice, garlic and Worcestershire Sauce. A spicy Bean Salad recipe is popular in Mexico and uses canned black beans, kidney beans, cannelloni beans with peppers, corn, onion, lime and lemon juice, cilantro, hot pepper sauce and chili powder. Ranch Bean Salad contains a can of Ranch Style Beans, onion, tomatoes, cheddar cheese in a Catalina salad dressing, garnished with cilantro. This Bean Salad recipe is usually served over corn chips that have been crumbled.

Lentils have always been a favorite choice when it comes to beans and pulses. Lentil spouts are added to cucumber, tomatoes, green onions, cilantro and radishes. A dressing is added, made with lemon juice, white wine vinegar, oregano, garlic, curry powder and mustard. Lovers of Middle Eastern cookery enjoy couscous and Black Bean and Couscous Salad is a dish, full of flavor. Cook the couscous in chicken broth and fluff up the couscous on removal. Other ingredients include lime juice, vinegar, cumin, green onions, red peppers, cilantro, corn and a can of black beans.

The heart of an Artichoke is a more unusual ingredient and is artfully combined with bell peppers, onion, and cans of garbanzo beans (chick peas), kidney beans, and pinto beans. Add feta cheese and a balsamic vinegar dressing. Fruit can also be used in Bean Salad recipes, as in Apple Side Salad, which comprises of Granny Smith apples, celery, red globe grapes (de-seeded) and a can of kidney beans, with a creamy textured salad dressing.

There is no need to stick to the recipe book if you want to experiment with your own ingredients. Bean Salad recipes are even more delicious with a salad dressing. They are fun to make at home but ready-made dressings are a good idea if you want to save time. These salads are ideal for a starter or a lunch or to take on a picnic. They are easily transported in sealed plastic tubs.
